Kesari is a traditional south Indian dish. This dish can be prepared with the combination of Rava,water and sugar. You can even replace water with milk. But i prefer to do it with water. I love the smell,taste,color and the texture of the dish. Even though there are so many sweet’s in my favorites list, kesari will always be in the first place. For some reason, i love it!! I still remember my childhood days, when my mom prepare kesari and keep it ready when i come home from school. It taste so divine 🙂 I prepare it few days back for a Pooja in home and here it is for you guys !!
1.Rava – 1 cup
2. Sugar – 1 and half cup
3.Water – 2 cup
4. Cardamom powder – a pinch
5.Ghee – 3 tsp
6.Cashews – 10 nos
7. Kesari color – A pinch
8. Raisins -7 nos
1.In a pre heating non-srick pan, add the rava with the ghee . Fry in medium flame,with constant stirring until you feel a nice aroma. The rava will start turning golden brown.Transfer the mixture to a plate and set aside.
2.Add the water to the pan and bring to boil. Now add cardamom powder and then sugar,stir it until the sugar dissolves.
3.Now add the fried rava little by little to the boiling water and keep stirring simultaneously.Take care no lumps are formed,keep in medium flame and stir well.Keep in low flame and cook covered for 3-4 minutes or until the Rava gets cooked well.
4.Add the kesari colour and keep the flame in medium and stir well.Stir in medium flame for 4-5 minutes or still the kesari forms as a whole mass.
5.In a small pan,add in ghee, once it become hot turn off the flame, now goes cashews and raisins. Add it to our kesari. Serve it warm or cold 🙂 Happy eating!!
