Vegetable Sabzi

My favorite and my signature dish. Yes, this recipe never disappoints me. When i have hand full of veggies i go ahead do this sabzi. This is delicious and mouth melting . I prefer to add some butter in it, to enhance the taste.


  1. Onion – 1 medium sized (Roughly chopped)
  2. Tomato – 2 medium sized (Roughly chopped)
  3. Cashews – 5 to 7
  4. Butter – 2 tsp
  5. Oil – 2 tsp or more
  6. Capsicum -1 cup (diced)
  7. Califlower -1 cup
  8. Green peas – 1/2 cup
  9. Carrot – 1 Cup (diced )
  10. Beans – 1/2 cup ( cut into 1 inch piece)
  11. Potato – 1 cup (diced and peeled)
  12. Ginger Garlic Paste – 1 tsp
  13. Chili powder – 1/2 tsp or more depend on your spice level
  14. Coriander powder – 1 tsp
  15. Turmeric Powder – 1 tsp
  16. Garam masala – 1/2 tsp
  17. Jeera powder -1/2 tsp
  18. Kasthuri methi (dried fenugreek leaves) – 1 tsp
  19. Salt to taste


  1. In a pre heated kadai, add in some oil. Once it become hot its time to add all the veggies and shallow fry it for 15 mins. Set it aside.
  2. In the same kadai, add some more oil, once the oil becomes hot, add the roughly chopped onion and saute it for 2-3 mins, add ginger garlic paste and saute until the raw smell goes off, then add tomato’s and cook it until it become soft. Then add the cashews.
  3. Give it a saute. Turn off the flame and set it aside.
  4. Once the onion tomato mix comes into a normal temperature, put it in a blender and make a smooth paste out of it.
  5. Now in a kadai, add in some butter, once it starts to melt, add the smooth onion tomato paste and cook it until the raw smell goes off.
  6. Then add all the dry ingredient (Chili powder, coarinder powder, Garam masala,jeera powder,turmeric powder) and cook it for a good 5-7 mins.
  7. Then add all the shallow fried veggies and give it a saute so that the veggies well combined with all the masala and onion,tomato paste.
  8. Add little bit of water and cook it in a medium flame for 7-10 mins.Add needed salt.
  9. Finely add a tsp or more of butter and kasthuri methi, cover the pan, turn the heat to low and simmer the Veggie Sabzi for about 3 to 5 minutes.
  10. Serve it hot with roti. Happy eating 🙂
